Churro French Toast

Hola Amigos.! Lots of wonderful things going on in my vida(life) right now so I had to take a little break.

And although I've been gone and you haven't seen any new posts or photos.


I dream of sugar and baking up sweet ooey gooey love!


I assure my ovens have remained hot and I have so many new super delicioso recipes to share!



I know for you guys as well....things can get pretty busy en la vida (in life), crazy mañanas with long listas of things to do! 

But every since I was a young Chica, I was always told that breakfast was the most important meal of the day.

I also believe one can never be too busy for something sweet,


so I figured why not jumpstart your day with a wonderful mix of  los dos ( both)!


So may I present to you a magically delicious addition to your busy mañana (morning )guaranteed to make you.......



okay maybe you can't

but the taste is so buttery and delicious your mouth while have no choice but to slow down and smile!



Vamos a la cocina

Ingredients

For the French Toast
1/4 tsp of cinnamon
1 teaspoon vanilla
1 cup milk
4 large eggs
10 to 12 slices white bread ( I love texas toast it's thicker and holds up great once dipped)
 
For the Churro
1/2 stick of butter (melted)
3/4 cup of sugar
1 tsp of cinnamon
chocolate syrup or maple syrup (optional for those without a super sweet tooth)
 
Directions
  1. Break all the eggs into a wide, shallow bowl or pie plate; beat lightly with a fork. Stir in milk, vanilla and cinnamon .
  2. Over medium-low heat, heat griddle or skillet coated with a thin layer of butter, margarine or cooking spray.
  3. Place the bread slices, one at a time, into the bowl or plate, letting slices soak up egg mixture for a few seconds, if needed lightly shake extra cinnamon onto bread slice then carefully turn to coat the other side. Soak/coat only as many slices as you will be cooking at one time.
  4. Transfer bread slices to griddle or skillet, heating slowly until bottom is golden brown. Turn and brown the other side.  Place cooked French toast on a separate plate until it's time to dip in the Churro mixture.
  5. Once all your French Toast is done combine your 3/4 cup of sugar and your teaspoon of cinnamon in a shallow plate or dish. Melt 1/2 stick of butter about 45 secs or until completely melted pour it into a shallow bowl or pie plate , One at a time dip your cooked bread slices in the butter mixture and then place butter coated bread into your cinnamon sugar Churro mixture making sure to coat each side equally with cinnamon-sugary goodness!
  6. Now that the hard part is over here comes the  easy! Stack your plate with as many slices of Churro French Toast that you think  your belly can handle. Now if your a complete sugar addict( like some Chica that I know cough, cough!) this is the moment that you can either swirl on some maple syrup or heat up a small cup of your favorite chocolate syrup. I personally love the taste of Churros dipped in chocolate....so chocolate glazed Churro French Toast es tan Perfecto para mi! ( so Perfect for me)

{Latin Elvis} - Peanut Butter, Banana & Dulce de Leche Waffles

It's kind of ironic that I absolutely adore making breakfast foods, but if there ever was a day that I would skip a meal breakfast would most likely be the one I'd miss. 

It's not that I haven't paid attention in health class or watched one of the many info/brainwash "mercials" that declares breakfast the most vital and important meal of the day!



Yes, I do get it......but it seems that so many things are jam- packed into my mornings, that by the time I have a chance to stop it's 11:30 already and the window of breakfast opportunity has passed me by. 

But on those easy breezy mornings when I am finally on relaxed mode, I like to do my breakfast right! 



And when I do make breakfast it's usually go big or go home, maybe because I am subconsciously making up for all my unredeemed syrup soaked breakfast food possibilities.



But these precious days almost always involve lots of butter syrup, a thick rich bread of some sort and of course crisp crunchy pieces of bacon heaven. 

 This particular breakfast is a little bit of an ode to the " King of Rock & Roll" Elvis Presley,  I've always been fascinated with his innovative food choices especially his ever popular romance with peanut butter and banana sandwiches. 

 Here I give my take on the peanut butter and banana sandwich........ except I'm trading the white bread for a thick banana &bacon infused Belgian waffle.

Swept with creamy peanut butter than swirled with dulce de leche, dulce de leche is a creamy milk based confection prepared by slowly heating sweetened condensed milk. 

 It's the Latin equivalent to American peanut butter and in my eyes it's dessert royalty! I'm pretty sure that if Elvis was born in Spain he'd be eating dulce  de leche and peanut butter sandwiches......

 But since he wasn't I figured I could just kick  he's version of the sandwich up a notch and give it a Latin flair!




             Ingredients
 

2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons white sugar
1 teaspoon salt
2 cups milk
2 eggs
2 tablespoons vegetable oil
3 ripe bananas
6 strips of crispy bacon ( you can cook extra strips to place on top of waffles if desired)
peanut butter- just enough to spread on each waffle, I used about 1/2 cup for 3 large waffles
dulce de leche- about 1/2 cup
 
 Optional ( you can make homemade banana maple syrup, by simply cutting a few slices and sticking them in a jar of maple syrup overnight. It gives the syrup a discreet banana taste that adds a little something extra to each bite).
 
                                                Directions
 
 
 
1. Preheat your waffle iron, cook your desired amounts of crispy bacon and set aside.
 
2.Mash two of your ripe bananas and set aside, you can also chop the other two bananas that will act as toppings for your waffles and set those aside as well.
 
3.In large bowl mix together flour, baking soda, sugar and salt. Add milk, eggs and oil mix well;
 
4. Now add in your mashed bananas and 6 slices of bacon crumbled into small bits. Mix until both ingredients are well incorporated.
 
5. Spray preheated waffle iron with non-stick cooking spray. Pour batter onto hot waffle iron cook until golden brown.
 
6. Once all waffles are cooked stick your peanut butter and dulce de leche in the microwave for about 45 seconds each, until they are easier spread.
 
7. Spread each waffle with alternating layers of dulce de leche and peanut butter. You can put as much or as little as you like.
 
8. Layer each waffle with strips of crisp bacon and use your last banana and cut it into slices.  ( I sautéed a few slices of my bananas in butter, but later decided I preferred them as they were)
 
9. Finally if you are a real " hound dog" for the sweets you can swirl on a little homemade banana maple syrup.  
 
And there you go breakfast fit for a " Latin King" !

Justin Bieber is Mas Caliente Than Kevin Bacon

So last week was my daughter Bianca's 9th birthday and every year I make a special delivery to her class

with whichever treat her little heart desires.  Now my Bianca is a huge Justin Bieber fan and she has

been dedicated to loving Justin for almost 3 years now.  Unfortunately, 3rd grade children being who

they are some of the children in her class not only
do not care for Justin Bieber. They dislike him with

the same amount of passion that forces my daughter to practically beg me on her hands and knees to

purchase every single magazine that has Justin's face gracing the cover. So I was shocked when she

said she wanted me to make the cupcakes that I added to Chica Chocolatina menu 2 years ago to

show our love for Justin Bieber ( yes, yes I did say OUR LOVE), I think he is a very cute, determined and talented little kid). It is a vanilla-maple bacon

infused cake, swirled with rich maple butter cream ( since Justin is from Canada and Canada is famous for its maple syrup we actually found pure maple syrup straight from Canada to use in the

butter cream. The Canadian maple butter cream is than infused with Justin's favorite color, purple. A crispy piece of maple bacon is dipped in milk chocolate than placed on top of the cupcake with royal

purple sprinkles. Trying to find a name for this cupcake was a little tricky at first, I thought calling it a Justin Bieber bacon cupcake was just too plain and didn't give any justice to the extraordinary taste

of a maple-bacon cupcake or even the exceptional talent or the person that this cupcake was dreamed up for.  So after some time it just clicked as a young girl "Footloose" was my absolute favorite movie

and I was totally obsessed with Kevin Bacon, well actually it seemed like everyone was at the time. Anyway I felt like my childhood obsession with Kevin Bacon was similar to the way my Bianca felt

about Justin Bieber (his last name also played an insy winsy part, lol).  Even though I think Kevin Bacon has aged beautifully and is still sexy as hell! But I'm sure all those preteen Justin Bieber

loving girls would profoundly disagree and decided that I should accept that a new generation has taken over and respectfully named this the


Justin Bieber is Mas Caliente Than Kevin Bacon Cupcake ♥ And just because I know that some little 9 year olds can be relentless with their teasing and distaste for someone or something that

they don't like. I made a few cupcakes with plain white butter cream, royal purple sprinkles and the chocolate dipped bacon. I couldn't stand to think that they would ruin Bianca's special day by

possibly throwing away the cupcakes just because Justin Biebers face was on them. What those kids don't know is that no matter the decoration a little bit of Justin Bieber is baked in side each little

cake, because me and Bianca had so much fun stirring, mixing and pouring all while Justin Bieber was blasting through our kitchen the whole entire time♥
