Strawberry & Lime Jello Milkshake

Jello!.....

The super good wiggly stuff is not just for pre packaged lunch cups anymore, actually I was never really one for eating my Jello from a package.

I am very proud to say that Jello was officially the very first thing I was allowed to cook on my very own!

I ate so much of this stuff, well I ate half as much as I drank.

For some reason I loved to spoon drink my pre-wobbly Jello right after I added in the boiling hot water, seriously the hot sweet stuff was like soup for my soul.

If you haven't tried it like this, I do highly recommend.

I think that memories of my childhood romance with Jello sparked the idea for an official drinkable version.

And when I finally had a sip,

it was everything that the 8 year old hot Jello sipping aficionada ever dreamed it could be! And since Jello comes in so many assortments the flavor and the flavor combos are endless!

The super bonus to this recipe, is that it can be made in 3 little pasitos (steps)

Vamos a la cocina!

                                             Ingredients
1 cup milk
1 pkg. (4-serving size) Jello, any flavor

( I used Strawberry, Lime Jello & Vanilla Jello Pudding)
1 pint vanilla ice cream, softened
for the strawberry shake you can cut up a few strawberries and blend them right in, a splash of vanilla never hurt either for the vanilla pudding shake!

                                                            Directions

Place milk and ice cream in blender. Add Jello. Blend 30 seconds.

Garnish your yummy milkshake with add-ons like; cherries, strawberries, whip cream & sprinkles!

Punch, Drunk, Love- Corona, Fruit Punch Cocktail

Punch, Drunk .......what is it exactly?!

When pondering the idea, one may have an image of an overtired young chico who is running around the house haphazardly ripping out toys and leaving them in tripping hazard trails behind him. Shrills of half-joy half-tears beaming  from this little chico echoes along the walls of the house.

These irrational shrieks are coming from a place unknown to the overtired, unwilling to surrender sweet muchacho.  Until a knowing mother piers on and says to herself " he is punch drunk"!

She then makes her way to retire her weary little boy, lulling him into la la land...peace and quiet resounds the home once again.

Now me.....when I think of "punch drunk"....it brings me to a very different scene, una noche loca ( one crazy night) that I spent with( out of all the people with my very own ma-ma.)  This noche loca consisted of : a throng of eager woman, obnoxiously loud music, a stage and an extra fine group of respectable half-dressed men.

Oh yeah, and multiple glasses of these fruity red drinks that tasted more like innocent cups of Kool-Aid than the mind-numbing, ogling enhancing, judgment altering libations that they were.

Now this Valentine's day whether your dealing with an overtired, irritated muchacho or experiencing what I now like to call " Magic Mike Moments" ending the night with a nice glass of "Punch, Drunk, Love will make it all go down a little easier!

Best Ever Chocolate Mexicano- Mexican Hot Chocolate

Parting is such sweet sorrow......no truer words were spoken, especially if you are part of a ultra fun cooking club.

I found the I heart cooking club by chance, what are the odds that a cooking club that features many different chefs at any given month was featuring the chef I idolize as a " culinary rock star" during the month I stumbled upon it?! I have no question that it was meant to be, especially since I've been meaning to give Rick Bayless' recipes a try but somehow other recipes have gotten in the way. So now the end is here and the cooking club is moving on to a new chef, I will continue my lance de amor pron: lohn-say day- ah-more ( love affair) see doesn't lance de amor sound so much sweeter than just a plain old love affair!

Upholding my belief that everything sounds so much better en Espanol! Okay with that said, here are a few of my favorite Rick recipes so far. This last one is my final entry, which is hands down my favorite one. It's simple and sweet, no fuss no muss just a super easy recipe that leaves you thirsty for more.......literally.

I have always heard how rich and delicious Mexican Hot Chocolate was, but perhaps the fact that I didn't own a molinillo (a traditional turned Mexican wooden whisk) was a deterrent.

I felt like to make an authentic cup of Mexican Hot Chocolate the molinillo was a must, but I finally conceded and decided to give it a try. With my wooden spatula in hand, I stirred the huge cinnamon infused chocolate tablet until it transformed into hot froththy wonderfulness.

Estoy tan feliz(I'm so happy)that I did, my chicas couldn't stop drinking it and giving me praise for all my hard work!

With the last drop sipped, and the chill of fall in the air,we as a familia dubbed Mexican Hot Chocolate our official winter drink...but not until one my chicas suggested that we add a few marshmallows and a splash of cinnamon..leave it to my chicas to add a little American flair! Maybe their on to something.....next time perhaps I will add a little American spirits! Salud ♥

Mexican Challah Grilled Cheese, this was so rich and creamy, I can see this sandwich showing up muchas veces ( many times) in my casa!

Raspberry Rosita- Raspberry-Lemonade Corona helped sweeten my relationship with beer, a refreshing summertime sipper you won't want to put down!

I love the taste of this Dulce Cajeta, it's suave (smooth), dulce (sweet) and perfect on almost anything!

Adapted from Rick Bayless’ Mexico One Plate at a Time (Mexican Hot Chocolate)

  Ingredients

2 1/2 cups milk or water

1 tablet 3.3oz Mexican Chocolate -( Ibarra or Abuelita, found in the Hispanic grocery aisle)

Optional- Marshmallows and sprinkle of cinnamon

Recipe

Combine 2 ½ cups milk or water and 1 tablet 3.3oz of coarsely chopped Mexican chocolate, such as Ibarra, in a 2-quart saucepan; stir over medium heat until mixture is steaming hot and the chocolate more-or-less dissolved (there will still be small pieces). Pour into a blender or you can usea hand held immersion blender and tall pitcher. If using a blender, loosely cover or remove lid’s center piece to eliminate pressure build-up; blend until mixture is foamy, about 30 seconds. Pour into cups. Serve immediately.

Makes 2 1/2 cups approx or four 6-ounce servings.

Watermelon Agua Fresca

This has been one of the hottest starts to summer that I can remember in many years. This week alone temperatures have not dropped below 90 degrees, well at least until the night. When I found out the forecast for the weekend was going to reach  temperatures over 101 degrees I had no plans to go anywhere!

I have been wanting to make my own Agua Fresca for a while, and figured that this weekend would be the perfect time. With a predicted forecast as hot as "melting" this would be a wonderful way to keep my chicas hydrated and happy in a healthier way then a sugary soda or juice box. Agua Fresca is a popular drink in Latin America, it is a mix of fresh fruit, agua (water) and a small amount of sweetener such as sugar but I used agave in mine.

Agua Frescas can be made using an array of fruits such as guavas, strawberries, mangoes even cucumber, I decided to make Watermelon Agua Fresca because I knew that was a flavor that my chicas would agree upon. I was a little disappointed about the taste of the first pitcher, I think I used a little too much salt and lime.

Also the agave is something I love to use in baking, but for me in a drink it didn't give the touch of sweetness I was looking for.  I have a feeling though that this is going to be a long, hot summer so I will have plenty of time to refine my skills in making an Agua Fresca Perfecta! Stay Cool and enjoy the rest of your weekend! ♥
