Dulce (Sweet) Dreams

So although I totally intended to commit myself via new year's resolution to blogging every week or at

least every month, I have obviously fallen a little bit short......ah...well.....a lot of bit short. But! I have
been baking and I do have a lot of

updating and catching up to do but

in an attempt to not overwhelm

myself and stay committed to

frequent blogging I will update little

by little.   Okay so there are so

many ideas for baking and creating

that go through my cabeza every

day, but one that has consistently

been on my mind is making my own  homemade dulce de leche. There are so many scary recipes out

there that include having a boiling pot on your stove for four or more hours and possible implosion

and imminent disaster in your kitchen if the process is not handled properly. With fear keeping me

from trying these possible disastrous ways and faith that I would find a more chica friendly way to do

it I never did make my homemade dulce de leche. Until now and let me tell you that the process and

the results were so well worth the wait! 

The more calming method of making your own dulce de leche included a crock pot, time and

relaxation which were all definitely more my style.

Making Whoopie!....Or at Least The Pies.

Sounds fun huh??... Well I have to admit it really was, as I said before it is a un ano nuevo and I have so many new and decadent dessert ideas that I want to try. Whoopie Pies have been on my list of want to try desserts, I wasn't sure at first how I would feel about making them. Would they be hard to make ? or easy to make? Honestly, they were very fun to make and before I could even think about it I was making so many that I felt like a Whoopie Pie maquina. Chocolate Whoopies, Vanilla Whoopies. Chocolate-Vanilla Whoopies and that was just the cake. After the baking was done then it was time to fill them with cream and swirl some of them with sweet salsa! Since this was my first time making whoopies I kind of kept the flavor combos simple but delicioso! The flavors that I made this time were chocolate cake filled with vanilla cream, chocolate cake filled with chocolate cream which are really quite common. But soon enough my adventerous side kicked in and I drizzled some with dulce de leche, filled some with chocolate chips and then my spicy side tried to take over and reached in my cabinet for my ancho chilli spice, but then I said ummmm not ready to kick it up just yet so I settled on bringing out my sweet Mexican Cinnamon also known as Canela instead. Once I was done making all of my little pies of heavenly sweetness I decided it was time to give them a try. Ay Dios Mio!!! They were delicious, nope not delicious better than that they were DELICIOSO! ♥ They were like little bites of sunshine right there in my mouth, they made me so happy I wanted to give them nombres (names). I decided that Solecitos would be the perfect name for these little bites of heaven because the word solecito in Spanish translates to "little sun" and these whoopie pies were just that small little cakes that would brighten anyones day! Okay so now I have named my Whoopie Pies as a whole, but didn't each flavor deserve their own special nombre too? Por supuesto! Of course they did after all that is half the fun, so with that the chocolate chip became " Chocolate Chip Whoopie Dough" the sweet cinnanom chocolate one became " Mexican Whoopie" and the Chocolate-Vanilla one became " White House Whoopie" any ideas on how I came up with that one? Hehehe! Now with that all said this was just my very first aventura with whoopie pies and I can assure you that as much fun as I had with them, this will not be my last. I already have visions of more Whoopie dancing in my head......red velvet whoopie, chocolate peanut butter whoopie, butterscotch whoopie, whoopie in margaritaville.... thinking lime for this one, oohhh the possibilities. Feliz Ano Nuevo!

Feliz Ano Nuevo is how you say Happy New Year in Spanish, and with a new year already here it makes me think of all things that are to come and excitement for the future! Also with every new year comes new expectations or hopes and of course resolutions to change the things that you may have neglected in the past. For me my blog is definitely one of those "things" that come to mind and I am putting it at the top of my resolution list for 2012. There really is no better way to document my journeys and ideas in baking and business and at one time in my life I really enjoyed writing and as a child dabbled with the idea of becoming a writer. I actually didn't come up with the idea on my own, but I was encouraged in least in thought when my wonderful 4th grade teacher Ms. Hart ♥ said I had a gift for writing and she always looked forward to reading my work! It's amazing what a fabulous teacher with positive words and encouragement can do for a child's self-esteem.



Anyway, enough with the sentimentals and on to the cake! Feliz Ano Nuevo, Happy New Year! Whichever way you say it, I have a feeling 2012 is going to be GREAT!!

Feliz Cumpleanos to my new Nina Chiquita

It's definitely been a long time since I have posted my last blog entry.....but it's not because I have lost my love, passion and obsession for cupcakes, cakes and all things yummy and decadent. It's just that I have been very busy with my new little cupcake baker in training (hopefully she will love cake as much as I!! I'm keeping my fingers crossed! lol) If her reaction to her very first birthday cake is any indication of her love for cake, then we are on the right track! When thoughts for the theme of her birthday cake came to pass, there was no need to consult my cake design consultant ( better known as my Bianca :)!) My little Valentina has been going crazy over one cartoon and watches it almost daily since she was 4 months old. Yes!!! 4 months old! Her cake would have to be POCOYO her very favorite Spanish cartoon! And the time spent making this cake was nothing compared to the sparkle that lit up in her little eyes when she spotted Pocoyo and all his amigos. She was so enamored with her very first birthday cake that I was obliged to feed her need to gawk at her cake for a long as her little her felt neccesary. So to the dismay to many of the party guests I vowed not to cut Valentina's Pocoyo cake that day, but offered up an ice cream cake as conselation to the original. Sorry, Mom! Anyway Valentina's day was very special and I am happy to introduce her into our crazy family and add her into the 4 spot on her mommy's VIP cake client list!!! Sweet Baby Bubbles


This little chica cake was made for a mommy who was awaiting the arrival of her sweet baby to be! The entire cake was edible all the way from the bright orange soap and the round soapy bubbles, down to the yellow baby ducks swimming in aqua blue buttercream waves.

La Fiesta, El Carnival and El Donut




The theme for Bianca's end of the year party was "A Day at the Carnival", I must admit I was exhausted from a week of "mucho cake" from baking Bianca's treats for school, her Favorite Things Cake and her popcorn favors I was caked and baked OUT!!! But everytime a school event or party comes around I somehow fell obligated to create something. The final creation for Bianca's last party as a Kindergarten Girl was a donut cake.

I stacked descending layers of vanilla glazed, chocolate and powdered sugar donuts. I tried to add a Carnival theme to this delicious mound of donuts by adding colorful lollipops, circus peanuts, candy dots, sprinkles,wax soda bottles and mini sticks of cotton candy on top.

Up,Up and Away!

Bianca's 6th Birthday was celebrated at our local movie theater. All of Bianca's birthday guests celebrated in the movie theater party room by opening presents, singing Happy Birthday and eating yummy cake. After the party room the children went into the theater and watched Disney's latest 3d movie "Up". Each child was given a goodie bag filled with classic movie candy (gummy bears, mini chocolate bars, licorice, m&m's, junior mints and red hot dollars) to enjoy while watching the movie.


To take home every child was given a popcorn container filled with mini vanilla cupcakes covered in vanilla buttercream then topped with mini marshmallows representing popcorn covered with melted butter.


Underneath the cupcakes all the children would find yet more surprises, As if there sugar high wasn't at an all time MAX!!! We placed candy laffy taffy strips, a toy whistle, a bouncy ball and a small water gun.


All of the children were happy with their special treats and Bianca went home happy on her special day!
